淡水鱼糜漂洗水中水溶性蛋白质回收的研究 被引量:10

Study on the Recovery of Water Soluble Protein from the Washing Water of Freshwater Fish Surimi

摘要 研究和比较了四种不同回收剂回收淡水鱼糜漂洗水中水溶性蛋白质的特性。首先,通过正交试验法以蛋白质的回收率为指标,优化三氯化铁、阳离子聚丙烯酰胺、明矾和硫酸锌回收淡水鱼糜漂洗水中水溶性蛋白质的的最佳条件,分别为三氯化铁浓度0.05%、pH值6.0、温度20℃和时间50 min;阳离子聚丙烯酰胺pH值3.0,浓度0.4%,时间70 min和温度20℃;明矾浓度0.2%,pH6.0,温度20℃和时间50 min以及硫酸锌时间70 min,温度15℃,浓度0.2%和pH7.5。其次,测定四种不同回收剂在最佳条件下回收淡水鱼糜漂洗水中水溶性蛋白质的回收率,最大回收率分别为三氯化铁83.26%、阳离子聚丙烯酰胺70.78%、明矾74%和硫酸锌61.56%。从回收效果、卫生安全性和成本角度综合考虑,三氯化铁法和硫酸锌法具有实际可应用性。 The characteristics of four different substances using for the recovery of water soluble protein(WSP) from the washing water of freshwater fish surimi(WWFFS) were studied in this paper.Firstly,their optimum conditions for the recovery of WSP from WWFFS were optimized through four the orthogonal tests of L9(34) using the protein recovery ratio as decided index,results showed that the four optimum conditions were concentration 0.05%,pH 6.0,temperature 20℃ and time 50 min for FeCl3,concentration 0.4%,pH 3.0,temperature 20℃ and time 70 min for polyacrylamide(CPAM),concentration 0.2%,pH 6.0,temperature 20℃ and time 50 min for Alums,and concentration 0.2%,pH 7.5,temperature 15℃ and time 70 min for ZnSo4,respectively.Secondly,their recovery ratios in their optimum conditions were analyzed as 83.26% for FeCl3,70.78% for CPAM,74% for Alums and 56% for ZnSo4.FeCl3 and ZnSo4 can practicably use for recovery WSP from WWFFS comprehensively compared recovery ratio,safety and cost.
