摘要
研究了复合甜味剂在三华李凉果中的应用,以解决甜味剂使用量超标的问题。利用甜味剂间的协同增效作用,选择合适的甜味剂复配,得到最优配方为:糖精钠1.511g/kg,甜蜜素6.0g/kg,纽甜2.5g/kg,甜菊糖1.0g/kg。
To solve the problem of sweeteners' overusing, the application of compound sweeteners is studied in preserved Sanhua Plum. The appropriate sweeteners are selected to enhance the effect cooperative, the best formula is that sodium saccharin 1.511 g/kg, sodium cyclamate 0.6 g/kg, neotame 2.5 g/kg, stevioside 1 g/kg in Sanhua Plum.
