摘要
从芝麻油的加工工艺与质量改善、芝麻蛋白的提取与功能特性、芝麻中功能性产品的提取与应用、芝麻油掺伪检测、芝麻中功能性成分及芝麻油香味成分的检测等方面简述芝麻的研究现状;根据油脂加工业的发展,提出了芝麻加工应用发展趋势与产业发展对策。
The current research situation of sesame was briefly stated,such as the processing technology and quality improvement of sesame oil,the extraction and functional character of sesame protein,the extraction and application of functional components in sesame,the adulteration detection of sesame oil,the functional composition in sesame and the detection of flavor components of sesame oil,and so on.In addition,according to the development of oil industry,the development tendency of sesame processing and the development strategy of sesame industry were put forward.
