摘要
筛选不同浓度的壳聚糖溶液用于黄瓜的涂膜保鲜。试验结果表明,采用1.5%浓度的壳聚糖溶液对黄瓜进行涂膜12 d后,黄瓜的失重率为8.1%,叶绿素含量减少0.06 mg/g,VC含量减少2.03 mg/100 g,能很好降低呼吸强度,保持其质地、外观和营养成分,室温下贮藏可延长黄瓜的货架期。
In order to preserve cucumbers,all kinds of biological preservation films were chose by coating it.The results showed that the making film solution were 1.5% for cucumbers after 12 days.The rate of water-loss of cucumbers were 8.1%,total chlorophyll ruduced 0.06 mg/g,vitamin C ruduced 2.03 mg/100 g.The biological preservation films can lower breath strength,and prolong the foods shelf life effectively,in the room temperature strore can entend the goods shelves time of cucumbers.
