摘要
针对目前中国本土餐饮企业发展中存在的问题,借鉴国外成功经验,从服务能力演进与知识利用的视角,探讨了中式餐饮企业的良性发展要把握服务能力从"手工"到"共同配置"的多层次、不同阶段、不同行程的工作方式变革,把握成功的餐饮企业服务能力的提升要以知识发展和使用为基础。
Dealing with problems of the development of Chinese-style catering enterprises presently,and combining the successful experiences from foreign companies,the paper brings forward the model of service capacity evolution,and tries to propose some suggestions: grasping the healthy development of Chinese-style catering enterprises from "handicraft" to "common disposition" in multi-level and different phases and different routes,and at the same time,grasping the successful promotion of service capacity of Chinese-style catering enterprises is based on the development and utilization of knowledge.
