摘要
研究了香型啤酒花扎一香花和苦型啤酒花纳盖特、马可波罗、青岛大花等在不同储存条件下啤酒花贮存指数(H.S.I.)的变化。以H.S.I.为考察指标,采用正交实验对储存时间、残氧量、温度等影响因素进行了研究。结果表明,青岛大花的最佳储存方案为温度4℃、残氧量>1.0%、储存时间30 d;扎一香花的最佳储存方案为温度4℃、残氧量0.2%、储存时间30 d;纳盖特的最佳储存方案为温度4℃、残氧量0.4%、储存时间60 d;马可波罗的最佳储存方案为温度4℃、残氧量0.4%、储存时间30 d。
The effects of storage conditions on the H.S.I.values of hops SA-1,Nugget,Marco Polo and Tsingdao flower were studied.The main influential factors such as temperature,residual oxygen and storge time were explored through orthogonal experiment.The results showed that,for Tsingdao flower,the optimum storage mode was at 4℃ for 30 d with residual oxygen1.0%;for SA-1,was at 4℃ for 30 d with residual oxygen of 0.2%;for Nugget,was at 4℃ for 60 d with residual oxygen of 0.4%;for Marco Polo,was at 4℃ for 30 d with residual oxygen of 0.4%.
