摘要
综述了茶叶浸提技术、茶酒酿制技术和茶酒澄清技术3个方面的研究进展。介绍了各种浸提条件对茶叶有效成分的影响、浸提勾兑技术和发酵技术两种不同的酿酒工艺、化学成分、膜过滤技术对茶酒澄清程度的影响。
The research progress in the extraction techniques of tea-leaf(the effects of different extraction conditions on the effective constituent of tea-leaf),the production techniques of tea liquor(investigation on two different tea liquor-making technology including leaching-blending technology and fermentation technology),and the clarifying techniques of tea lqiuor(the effects of chemical components and membrane filtration on the clarifying degree of tea liquor) was reviewed in this paper.
