摘要
介绍了淡雅浓香型白酒生产中,转排前后所采取的工艺调整和必要的工艺措施。对夏季压排工艺和起排工艺的工艺参数进行合理控制,可实现夏季白酒生产粮醅的正常发酵,稳定夏季生产和提高产品质量。
In this paper,the necessary technical adjustment and the indispensable technical measures before and after trans-production stage of elegant-type Luzhou-flavor liquor were introduced.The proper control of technical parameters for longing fermentation and upping fermented grains in Summer could realize normal fermentation of fermented grains,which would further achieve stable liquor production and improve liquor quality in Summer.
