糟蛋是我国具有独特风味的蛋制品,最为著名的有浙江平湖软壳糟蛋,四川宜宾叙府糟蛋和嘉兴新塍高公兴硬壳糟蛋。为了传承我国的饮食糟蛋文化,介绍了这3种糟蛋的特征,配料及加工技艺。
Wine cured egg, a Chinese egg products with special flavor, is called a peculiar in Chinese food culture. Its manufacture has a long history and manufacturers are all over the country. The most famous manufacturers include Zhejiang Pinghu sofl shell wine cured eggs, Sichuan Yibin Xufu wine cured egg and Jiaxing Xincheng Gaogongxing hard shell wine cured eggs. In this article, the characteristics, ingredients and process techniques of the three wine cured eggs were introduced, respectively.
