食物安全中的溃堤效应分析

摘要 在分析食物安全事件成因及风险因子变化规律的基础上,总结归纳了食物安全的隐性风险因子和显性风险因子。通过对近10多年来国内外食物安全事件的分析,研究发现食物安全形成过程中存在多重因素变化,重点分析了食物安全事件引发的"溃堤"效应,研究了事件影响的后果表达,深入探讨了食物安全溃堤效应模式,提出了食物安全事件防范管理的相关建议与措施。 On the basis of analyzing the causes of food safety incidents and change rules of risk factors, two types of risk factors such as hidden risk factor and dominant risk factor were summarized. By studying domestic and foreign food safety incidents in the past ten years, it was found that multiple risk factors existed in the process of food safety evolution which caused different food safety incidents. The burst effects caused by food safety incident were focused, the consequences of the incidents were discussed and the model of burst effects in food safety were investigated. Finally some recommendations and countermeasures related to food safety management were put forward.
