摘要
综述国内外对大米多肽功能性质的研究进展,着重阐述其抗氧化活性和降血压活性,介绍国内外大米多肽的制备方法,指出大米多肽研究中需要解决的问题及应用前景。
Introduces the functinal properties of rice peptide in domestic and foreign,focusing on the antioxidant activity and antihypertensive activity.and then introduces the rice peptide preparation methord in domestic and foreign,the results indicate that different peptide hydrolysis by different protease have different properties,while the peptide hydrolysis by composite protease have the best functional properties.Finally,this paper prospect the problem need to be solved during the research on rice peptides and the application of rice peptides.
