本文介绍了甲壳素和壳聚糖及其有关化学改性方法,阐述了水溶性甲壳素和壳聚糖衍生物的制备方法及其在食品工业中作食品添加剂的应用。
Chiun, chitosan and some chemical modified methods bout them were introduced.Some preparation methods about the derivations of water-soluable chitin and their usesas food additive in the fodd industry, were reviewed.
