摘要
燕麦作为世界上最重要的功能性谷物食品之一,对其研究与开发已引起广泛关注,其中,燕麦中富含的膳食纤维——燕麦β-葡聚糖更是当前研究的热点。通过对国内外燕麦β-葡聚糖分析检测方法研究成果的归纳、总结,其中包括含量分析、相对分子质量分析和结构分析,提出了燕麦β-葡聚糖研究过程中各阶段较为有效的分析方法。
Oat was one of the world most important functional cereal foods and its research as well as development had attracted wide attentions, where, dietary fiber β-gluean contained highly therein was especially a hot spot. This paper put forward the comparatively effective analysis methods for each research stage of β-gluean in oat, through summarizing the research findings of β-glucan in oat by various analysis and detection methods at home and abroad, including the content analysis, relative molecular mass analysis and structural analysis.
