摘要
该文研究了阿月浑子、枣树和葡萄组织培养苗生长过程中多酚氧化酶(PPO)活性和总酚含量的变化规律.结果表明:多酚氧化酶活性与组织培养材料的褐变指数相关性不明显,总酚含量与材料褐变指数有一定的相关性,即褐变严重、褐变指数高的材料多酚含量特别高.说明褐变发生的条件是复杂的,不只是多酚和多酚氧化酶直接作用的结果.
The regulation of Polyphenol oxidase (PPO) and phenol contents of Zizyphus jujuba Mill , Vitis vinifera L. and Pistacia vera L. were studied. The results are as follows: PPO activities have no interrelation with browning index but to some extent phenol contents has. That is to say, material browning is not the result of directly interaction between PPO and phenol, there are more reasons to influence it.
