摘要
对生物材料在对流干燥过程中的传热传质机理进行了探讨,着重对材料在干燥过程中的收缩现象进行了分析,引入了材料的收缩率概念.干燥过程中随着材料的不断收缩,湿分从材料的内部向外部的传递受到阻碍.本文就收缩过程对自由水、边界水和蒸汽运动过程的影响进行了分析.
Mechanism of heat and mass transfer during convection drying of biological media is discussed. Shrinkage ratio is provided during drying process. With shrinkage of media, moisture transfer becomes more difficult. The effect of shrinkage during drying process on free water、bound water and vapor transfer is discussed.
