摘要
[目的]认真贯彻《学生集体用餐卫生监督办法》、《餐饮业与集体用餐配送单位卫生规范》、《食品卫生监督量化分级管理制度》,防止学校食源性疾病的发生。[方法]2008年6月,对乌兰察布市城区20所学校及幼儿园食堂进行食(饮)具消毒效果调查。[结果]合计检测182份消毒后待用的食(饮)具,大肠菌群合格率为79.12%。食(饮)具大肠菌群合格率,中学及中等专科学校食堂、幼儿园食堂分别为72.73%、85.11%(P<0.05),学校自己经营管理食堂与炊管人员承包的幼儿园食堂分别为82.61%、68.18%(P<0.05),蒸汽消毒的餐具、电子消毒柜消毒的食(饮)具分别为85.59%、67.19%(P<0.01),碗、不锈钢餐盘、筷子合格率分别为77.89%、87.30%、62.50%(P<0.05)。[结论]乌兰察布市城区学校、幼儿园食堂食(饮)具消毒效果较好。
[Objective]To carefully implement "Method of health supervision over studems" group meal ". " Hygienic specification of catering trade and group meal delivery units System of quantification and classification in food hygiene supervision ", to prevent students from food-borne diseases . [Methods]The effect of tableware disinfection was investigated in 20 school and kindergarten dining halls in June 2008. [Results] 182 sterilized tableware samples were tested . the qualified rate of coli group was 79.12 %. The qualified rate of coli group was 72.73% and 85. 11% in schools and secondary school ,kindergarten dining halls ( P 〈0.05). It was 82.61% and 68. 189% in school management dining halls and kindergarten dining halls contracted ( P 〈0.05). The qualified rate was 85.59% and 67. 199% with steam sterilization and electronic cabinet ( P 〈0.01). The qualified rate of bowls, stainless steel plate, chopsticks was 77.89%, 87.30%; and 62.50% ( P 〈0.05). [Conclusion]Tableware disinfection was effective in school and kindergarten dining halls in Ulanchab city.
