摘要
在大米的储藏过程中,爆腰、陈化和发热霉变是极易出现的影响大米质量的问题。综述了国内外大米保鲜技术的研究和应用进展,重点介绍了大米储藏保鲜、生物制剂保鲜和辐照保鲜等。
When rice is in storage, rice cracked-waist,ageing, heating and moulding are the main problems which can infect the quality of rice. The progress in technology of rice storage home and abroad and it's application are introduced. And the technology of rice storage, biological fresh-keeping and Irradiation fresh- keeping are emphasized.
