不同加曲量对酱香型白酒中杂油醇影响探讨 被引量:22

摘要 杂油醇是白酒中含量较大且对人体有毒害作用,实验研究了不同大曲加量对白酒中杂油醇含量的影响,研究得出,不同大曲加量对正丁醇、异丁醇、异戊醇及杂油醇总量影响不同,曲料比1∶1和1∶1.3时,杂醇油的生成量已趋于平缓,加曲量来控制杂醇油的生成具有可行性。 Fusel oil content is high in liquor and has a poisoning effect on the human body. In this paper, effect of different addition of Doqu on fusel oils content were studied and the results showed that effects of different addition volume of Daqu on n-butanol, isobutanol, isoamyl alcohol and total fusel oil were different; when ration of materiel and liquid reach to 1:1 and 1:1.3, the formation of fusel oil had tended to moderate the volume; add Daqu to control the amount of fusel oil to generate feasible.
