摘要
综述了近年来关于葡萄酒中白藜芦醇及其衍生物的药理、生物活性,葡萄酒酿造工艺过程中白藜芦醇含量变化及影响因素等方面的研究进展。同时展望了上述研究领域今后预期的主要研究方向。
The research progress in resveratrol in grape wine and its derivatives was reviewed in this paper covering the fields such as their pharmaceutical and biological properties, resveratrol content change in wine-making and the related influencing factors etc. Besides, the main research directions for the future of the above fields were discussed.
