摘要
棕色化反应影响着烟叶及其烟草制品的外观和内在品质。对酶促褐变和非酶促褐变的反应机理、调控技术研究和在烟草中的应用现状进行了综述,探讨了棕色化反应调控技术的发展前景。
Browning reaction affects appearance and inherent quality of tobacco leaf and cigarette heavily. The reaction mechanism of enzymatic browning reaction and Maillard reaction, controlling techniques and its application status in tobacco were reviewed. The prospect of controlling techniques of browning reaction was also expected.
