摘要
利用GZ—1型热风干燥试验台对低浓度糖盐溶液渗后胡萝卜丝进行薄层干燥试验,确定了影响物料层干燥速率的各因素主次,分析了风温、风速、物料层厚度对脱水速率、于制品品质的影响规律,提出了较佳的脱水工艺和合理的性能参数。
Test on the air-drying performance for carrot slices after osmosis in lower concentration solution (sugar + NaCl) were conducted on the air-drying test desk ( Model GZ - 1). The order of importance of parameters which influenced the dehydrating rate of the materal was reached. The effect of the thickness of material, air temperature and velocity on the drying performance were analysed. Finally, the better drying process for the material was provided.
