报告了对采用酶水解法,由大豆分离蛋白制得大豆肽产品的部分功能特性的测定,其包括分子量分布、氨基酸组成、溶解度、粘度、吸水性及抗氧化性等。
This paper reports the determination of some functional properties of soybean peptides,which were made from soybean protein isolates with enzymatic hydrolysis method.There functional properties included molecular weight、amino acid components、solubility、viscosity、water absorption and antioxidation.
