摘要
介绍国内外机械去骨禽肉糜(MDPM)在食品中的应用及其在应用中出现的问题,如乳化、脂肪氧化、血红素氧化等,并探讨其开发利用前景。
The utilization and research development of mechanically deboned poultry meat emulsion are discussed in the paper, such as emulsification, lipid oxidation, and heme-oxidation, and the newest developing foreground of MDPM is discussed.
