摘要
研究了籼米为基质脂肪替代品中麦芽糊精、低聚糖和蛋白质的相对分子质量。结果表明,DE值为2、3、4和6的脂肪替代品的麦芽糊精数均相对分子质量(Mn)分别为8 3976、003、4 085与2 608,重均相对分子持量(MW)分别为251 070、111 655、64 543和27 367。蛋白质主要组分的Mn约为22 000,含有少量Mn为210 000组分;低聚糖含量随脂肪替代品DE值的增加而增加,低聚糖中麦芽三糖含量最高、麦芽六糖和麦芽糖的含量较高。
The molecular distribution of mahodextrin, oligosaccharide and protein in long grain rice based fat substitutes were determined. The Mn of the maltodextrin in the fat substitutes with DE 2, 3, d and 6 are 8 397, 6 003,4 085, 2 608, respectively and the Mw are 251 070, 111 655, 64 543, 27 367, respectively. The Mn of most protein fractions is about 22 000, and of a few protein fractions is 210 000. The amount of oligosaccharide increases with the DE value of substitute. The mount of maltotriose among the oligosaccharide is the highest, and the mounts of maltohexose and maltose secondary.
