复合酶解法制备酵母抽提物及其在高辅料比啤酒酿造中的应用研究

摘要 以啤酒废酵母为原料,采用复合酶解法制备酵母抽提物,通过各种酶制剂间互相复合酶解的反复对比试验,最终筛选出碱性蛋白酶A和风味蛋白酶A进行复合酶解,确定了最佳的酶解工艺技术路线,制备出酵母抽提物。酵母抽提物应用于高辅料比啤酒酿造中既可以提高废弃酵母的附加值,减少了企业污水处理的费用,也减少了对环境的污染。 The alkaline protease-A and flavor protease-A were selected after compound enzymolysis and repeated comparative tests, in which beer waste yeast was used as raw material. The application of yeast extract in the high auxiliary material of brewage could not only enhance the value of waste yeast, but also reduce the expense of sewage treatment, which has good economic and social benefit.
