摘要
探讨采前喷钙和采后浸钙处理对网纹甜瓜果实硬度、呼吸速率、乙烯释放量、细胞壁水解酶(多聚半乳糖醛酸酶、果胶甲酯酶和羧甲基纤维素钠酶)活力的影响。结果表明:与对照相比,采前喷钙和采后浸钙均能有效地延缓果实软化速度,推迟乙烯释放高峰出现的时间,还降低了呼吸速率、乙烯释放量和细胞壁水解酶的活性。在呼吸跃变之前,采前喷钙处理的呼吸速率低于采后浸钙处理,随着贮藏时间的延长前者高于后者。与采前喷钙处理相比,采后浸钙处理更显著地降低了细胞壁水解酶的活性,从而使果实硬度下降的速度减慢。
Changes of flesh firmness, respiration rate, ethylene production, cell wall hydralases ( polygalacturonase, pectinmesterase, carboxymethl cellulosase) activities of muskmelon were studied in order to investigate the effect of both pre-harwest and post-harvest calcium treatments on fruit softening. Compared to the control(water treatment), both pre-har- vest and post-harvest calcium treatments significantly delayed the muskmelon softening, postponed the peak of ethylene production, and reduced the respiration rate, ethylene production and the activities of cell wall hydrolases. Moreover, prior to the respiration climacteric, the respiration rate of pre-harvest calcium treatment was lower than that of the post-harvest cal- cium treatment, however, with the prolongation of storage, the former was higher than the latter. In contrast to the pre-har- vest calcium treatment, the post-harvest calcium treatment could remarkably decrease the activities of cell wall hydralases so as to slow down the rate of declining in flesh firmness.
