摘要
综述了国内外关于甘薯在食品工业中最新的研究动态。分析了甘薯品种基因培育,甘薯的营养、物性及风味等特性,甘薯食品加工方法及甘薯食品的贮藏保鲜等。根据我国甘薯产业的发展现状,指出了甘薯加工业今后的发展趋势。
The worldwide latest research tendency of sweet potato in the food industry was reviewed. The gene cultivation of sweet potato, nutrition, natural, flavor characteristic of sweet potato, processing methods and sweet potato food stores were analyzed. Accorrding to current development situation of sweet potato industry, the sweet potato processing industry trend of development and the suggestion were put forworcl.
