摘要
采用分光光度法、高效液相法对市售安吉白茶的茶多糖、茶多酚、茶色素、游离氨基酸、咖啡因等进行了测定,并与市售普洱生茶、熟茶进行了比较.经测定,白茶各组分的质量分数分别为茶多糖4.0%,其中还原糖2.15%;茶多酚22.3%;茶色素为茶黄素0.34%,茶红素1.27%,茶褐素14.7%;游离氨基酸为3.3%;咖啡因为0.9%.
Spectrometry and HPLC methods were applied to study the content of tea polysaccharide,tea polyphenol,tea pigment,free amino acid,caffeine in white tea from Anji,compared with Puer tea and Puer ripe tea.The data showed that the concentration of tea polysaccharide and reducing sugar are 4.0%,2.15,respectively;tea polyphenol is 22.3%;for tea pigments,teaflavin is 0.34%,thearubigins is 1.27%,theabrownine is 14.7%;free amino acid is 3.3%,caffeine is 0.9%,respectively.
