摘要
通过测定受试30d实验小鼠的转棒时间、血清尿素氮含量和肝糖原含量的变化情况,对比分析了两种蛋清蛋白水解物的体内抗疲劳生物活性。实验结果表明:5%浓度蛋清高F值寡肽在提高受试小鼠的转棒时间和肝糖原含量、降低血清尿素氮的含量的趋势上优于5%浓度蛋清多肽及大豆肽,它能极显著地提高受试小鼠的转棒时间和肝糖原含量(P<0.01);能降低血清尿素氮的含量,但差异不显著(P>0.05)。
Our aim was to study the anti-fatigue bioactivity of egg white protein hydrolyzate in vivo.The running time on a staff,the content of serum urea nitrogen(SUN) and hepatic glycogen of mice were determined to analysis the difference of anti-fatigue bioactivity between two kinds of egg white protein hydrolyzate.The results showed that 5% concentration of high Fisher ratio oligopeptide derived from egg white protein was much better than other material in increasing running time on a staff, increasing the content of hepatic glycogen and decreasing the content of serum urea nitrogen( SUN).It could significantly increase the running time on a staff (P 〈 0.01 )and the content of hepatic glycogen ( P 〈 0.01 ), but could no significantly decrease ( P 〉 0.05 ) the effect on serum urea nitrogen(SUN) compared to the control group.
