摘要
为了贯彻食品安全法,特把HACCP体系应用到消费人群较大的餐饮业,从餐饮企业"硬件"入手,运用HACCP原理对供餐烹调食品进行危害分析,找出关键控制点,并制定HACCP计划,实施监控和纠偏,从而使产品卫生安全得到保障。
In order to implement the Food Safety Law, special application of the HACCP system to catering trade that there is the larger consumer groups, from the hardware of catering trade start , hazard analysis cooking food by HACCP principles and identify critical control points, and develop HACCP plan, monitoring and implementation of corrective, so that product hygiene and safety are protected.
