淮扬菜是一个地域性菜系,也是全国四大菜系之一,其主源地在扬州。淮扬菜是历史长期积淀的结果。淮扬菜的形成与发展有其内在动能,它蕴含着深刻的历史人文价值:经济发展的驱动力,兼收并蓄的包容力,不断翻新的创造力,社会多种因素的合力。这四种内在的动能,凝聚成一股强大的力量,推动着淮扬菜的发展壮大。
Huaiyang cuisine as a local flavor, is also one of the four major cuisine styles in China, which is mainly developed in Yangzhou. Huaiyang cuisine is the result of the historical accumulation, whose formation and development involves internal forces and connotes the profound historical humanistic values, such as the driving forces of economic development, the absorbed capacity, constant creativity and the resultant forces of combined social factors. The four driving forces mentioned above converge into one and make Huaiyang cuisine progress and expand.
