摘要
在玫瑰花瓣红色色素理化性质和干燥过程中玫瑰花瓣变色机理研究的基础上,进行了玫瑰花瓣干燥前的预处理及预冻试验,考察了不同预处理方式和预冻方式对玫瑰花瓣冷冻干燥的影响,然后用真空冷冻干燥机进行了玫瑰花瓣的真空冷冻干燥试验,筛选得到了真空冷冻玫瑰花瓣的较优工艺:用20%氯化镁+5g柠檬酸组成的溶液处理5h,再放入1∶1的乙醇+正丁醇溶液中处理1h,冰箱慢冻4h,液氮速冻5min,最后真空冷冻6h,即可获得花色花形较好的玫瑰花瓣.
Based on the physical and chemical properties of the pigment of rose flower and the color change mechanic of rose dryness, the pre-processing experiments and pre-freezing before drying were conducted. The effect of pattern of pre-processing and pre-freezing on the following rose drying was studied. Then vacuum freeze-drying experiments were carried out in a vacuum freezing dryer. Afterwards, we obtained the better technology of vacuum freezing of rose. Before pre-freezing, the rose should be soaked 5 h in the 20%MgCl2 and 5 g lemon acid solution, and then soaked in ethanol (1 : 1) ;last, freezing slowly for 4 h in the fridge and quickly for 5 min in the liquid nitrogen, vacuum-freezing-drying for 6 h. The better product of dried rose flower was obtained, too.
