摘要
为探讨臭氧对磨盘柿贮藏期间生理生化指标的影响,试验设置了(0±0.5)℃冷藏,(0±0.5)℃冷藏配合每3 d用0.85μL/L臭氧处理9 min、(0±0.5)℃冷藏配合每3 d用1.88μL/L臭氧处理3 min 3种处理。结果表明,与(0±0.5)℃冷藏相比,采用冷藏加臭氧处理,显著抑制了磨盘柿的呼吸强度、PPO和POD活性,并明显降低了果肉硬度和可溶性单宁含量的下降幅度,2种臭氧处理相比,低浓度长时间处理比高浓度短时间处理对抑制磨盘柿采后成熟衰老效果更显著。
In order to discuss the effect of ozone treatment on index of physiology and biochemistry of mopan persimmon during storage, the experiments were made by three treatments: (0 ±0.5) ℃ cold storage; (0 ±0.5 )℃ cold storage + 0.85 μL/L ozone treatment with 9 rain every 3 d; (0 ±0.5)℃ cold storage + 1.88 μL/L ozone treatment with 3 rain every 3 days. The results showed that compared with(0 ±0.5) ℃ cold storage, both 0.85 μL/L ozone + cold storage and 1.88 μL/L ozone + cold storage could restrain respiration rate and PPO and POD activity, and declined flesh firmness and content of soluble tannin markedly. At the same time, the treatment of low-concentration and long-time had remarkable effect on restraining maturation and senescence of postharvest mopan persimmon, compared with the treatment of high-concentration and short-time.
