摘要
黑麦是一种富含多种营养成分的重要谷物.综述了黑麦膳食纤维、木酚素等的抗癌、抗氧化、益生作用等营养保健功能,介绍了黑麦在食品工业中的应用现状,并展望了黑麦的应用前景.
Rye is an important cereal source including many kinds of nutrients. The physiological effects and health care of rye dietary fiber and lignan in anticancer, antioxidation and prebiotic effects et al was reviewed. Its various food uses and the application were also advanced.
