摘要
在挤压大米啤酒辅料的糖化试验基础上,对其麦汁的过滤性能进行了进一步试验研究。研究了挤压系统参数的套筒温度、大米含水率、螺杆转速对麦汁的过滤速度和滤层粒度的影响规律。研究结果表明:套筒温度为60.7~74.1℃,物料含水率为17.9%~21%,螺杆转速为195~230r/min时,麦汁的过滤速度大于0.2mL/s,浸出物收得率高于74%,滤层的粒度大于550μm。
Based on saccharification experiments for extrusion of beer rice adjunct, the filtration function of its wort was studied further in this paper. The influence regularity of extrusion parameters on observed indexes was investigated. The parameters are the barrel temparuture, moisture content percentage of rice and screw speed. The observed indexes include the filtration speed of wort, the recoverable ration of wort extract and granularity of filtered layer of wort. The test results indicate that filtration speed of wort more than 0.2mL/s, the recoverable ration of wort more than 74% and granularity of filtered layer of wort more than 550um when the barrel temperature 60.7℃ - 74.1 ℃, moisture content percentage of rice 17.9% -21% and screw speed 195/rpm-230/rpm.
