摘要
乳酸链球菌素(Nisin)是一种世界公认的安全的天然生物性食品防腐剂和抗菌剂。它广泛的应用于食品工业,但是它的检测技术还较落后,阻碍了其进一步的发展。本文研究了目前的一些检测技术,进行分析讨论,结果显示目前的方法都存在各自的缺陷,最后进行了展望。
Nisin is a world recognized the natural biological safe food preservative and antibacterial agents. It widely used in the food industry, but its detection technology was not well developed. The current Nisin detection technologies and their defectives were summarized.
