摘要 研究刺山柑果实不同溶剂提取物抗油脂过氧化作用。分别选取石油醚、甲醇、乙酸乙酯、水作为溶剂,用冷浸法提取,采用743 Rancimat氧化稳定性测试仪测定各提取物对打瓜籽油的抗氧化作用。不同提取物对打瓜籽油均有一定的抗氧化作用。在质量分数为0.08%时,供试样品对打瓜籽油抗脂质过氧化的效果次序为:石油醚提取物>乙酸乙酯提取物>水提物>Vc>BHT>VE>甲醇提取物>对照。四种提取物对打瓜籽油均具有一定的抗氧化作用,石油醚提取物可以作为打瓜籽油的抗氧化添加物。 The effect of anti - lipid peroxidation of different extracts from Capparis spinosa fruit on sunflower seed oil was determined. Methods Dissolvent including petroleum ether, ethylacetate, methanol and water was used to extract the compounds from fruit individually by cold - maceration. The anti - oxidation function on oil was measured by accelerated oxidation test. Results There was the effect of anti - lipid peroxidation of different extracts from Capparis spinosa fruit on sunflower seed oil. When the quality fraction was 0.08% ,the sequence of effect of anti - lipid peroxidation were: petroleum ether 〉 acetic ester extracts 〉 water extracts 〉 Vc 〉 BHT 〉 VE 〉 methanol extracts. Conclusions All extracts showed a certain effect of anti - lipid peroxidation. The extracts by petroleum ether can be used as the anti - oxidation additive of sunflower seed oil.
