摘要 戊聚糖是小麦籽粒中非淀粉多糖的重要组成成分,具有重要的功能作用。综述了国内外关于戊聚糖的分类、测定方法、理化特性、戊聚糖对小麦品质的影响及其遗传学与栽培生理调控等方面的研究进展。
