摘要
采用新鲜番木瓜和新鲜水牛乳为主要原料,通过L9(3^3)正交试验筛选最佳配方为:鲜水牛乳85.0%,新鲜木瓜浆6%,低聚糖(水苏糖)3%,复合稳定剂0.15%,乳化剂0.1%。得到的产品经分析检测符合国家质量卫生标准,且产品口感细腻、木瓜风味浓郁、乳香突出、色泽微黄诱人,具有水牛乳和番木瓜双重独特风味的乳制品。
Taking fresh buffalo milk and Carica papaya L. as main ingredients,an optimum formula of Carica papaya L. flavored milk was determined by orthogonal experiment. The results showed that the proportion of fresh milk, papaya, stabiliaer, oligose ,was 85.0%,6.0%, 3.0% and 0.15%,0.1%, respectively. With fresh papaya and milk aroma, the product was determined to be in accordance with state standards.
