南阳市宛城区餐饮具集中式蒸气消毒管理方法的评价 被引量:4

摘要 目的自2000年南阳市宛城区餐饮具通过集中式蒸气消毒合格率逐年上升,为了进一步了解宛城区集中式蒸气消毒的效果,探讨科学的餐饮具消毒管理方法。方法宛城区于2006年继续按GB14934-94卫生标准,用大肠菌群快速检验纸片法进行餐具大肠菌群检测评价。结果宛城区2006年餐饮具消毒总合格率98.9%,其中集中式蒸气消毒餐饮具合格率100%,使用集中式消毒餐饮具的饮食单位餐饮具合格率99.1%,分散式消毒餐饮具合格率73.5%,集中式与分散式餐饮具消毒合格率,差异有统计学意义(P<0.01)。结论宛城区餐饮具通过集中式消毒达到了国家卫生标准。集中式蒸气消毒热穿透力强,效果好,只要实行量化分级管理,加强监督,即能保证餐具卫生质量,值得全面推广应用。 [ Objective ] To learn the effect of tableware's concentrated stream disinfection in Wancheng District and explore scientific management methods of tableware's disinfection. [ Methods] According to the hygienic standard of GB 14934 -94, Coli group fast test paper was applied to evaluate the tableware's Coli group in Wancheng District in 2006. [ Results] The total eligible rate of the tableware in Wancheng is 98.9% in 2006. The eligible rate of the tableware disinfected by concentrated stream is 100% and correspondingly the units using this method have a high eligible rate of 99.1%. But on the contrary the tableware which used decentral- ized disinfection method only have a eligible rate of 73.5%. the difference between the concentrated and the decentralized was significance(P 〈0. 01 ). [ Conclusion] Sanitary quality of the tableware in Wancheng District reached the national sanitary standard through Concentrated Stream Disinfection. According to the good effect on hygienic quality, concentrated stream disinfection is worthy of comprehensive application.
