摘要
酸沉降影响了稻米质量和口感。酸雨时空分布从宏观上概括了稻米品质的地理分布。酸雨决定了酶活性相关金属离子的丰缺,继而影响淀粉合成关键酶的活性,最终影响淀粉合成质量。温度变化是表象,降雨pH值变化是条件,酶活性相关金属离子丰缺是根本,实质是酶活性相关金属离子或激活或抑制了支链淀粉合成关键酶的活性。提出了改善粮食作物质量的化控创新技术路线。
The paper presents an inference that acid deposition has an impact on the quality and taste of rice. The paper puts forward the new inference that the spatial and temporal distribution of acid rain presents a macro - picture of the geographical distribution of rice quality. Acid rain determines the abundance and scarcity of metals related to enzyme activity, and subsequently affects the activity of the key enzyme for starch synthesis, and finally affects the quality of starch synthesis. The temperature change is just the superficial phenomenon, and the pH change the condition, and the fundamental factor is the abundance and scarcity of metal ions related to enzyme activity, which activate or depress the activity of the key enzyme responsible for sub-chain starch synthesis.
