摘要
对46家饮食单位的餐饮具的消毒情况及卫生设施、电热消毒器的配备,进行了检测、调查。电热消毒器、卫生设施齐全的有31家,但按餐饮具卫生要求,做到一用一消毒的只有10家;共采样检测407件餐饮具,大肠菌群合格率为74.94%;电热器消毒的餐饮具采样检测179件,合格率96.09%;煮沸消毒的餐饮具采样检测127件,合格率83.46%;未消毒的餐饮具采样检测101份,合格率只有26.73%;由此提示,应加强餐饮具消毒工作的管理及检测。
The condion of sterilization and hygeine equiment of 46 catering trades was surveyed,results showed.That the electric sterilizer and other equipmtes were comptete only 31 of 46 restaurents.The qualified rate for escherichia coli was 74 94%.It suggsted that is hecessary to pay more attenlion to the table ware sterilization.
