反相高效液相色谱法测定卤肉制品中硝酸盐及亚硝酸盐 被引量:11

摘要 目的采用反相高效液相色谱-二极管阵列检测器法测定卤肉制品中硝酸盐及亚硝酸盐含量。方法选择四丁基溴化铵(TBABr)作为离子对试剂,与硝酸根和亚硝酸根阴离子形成中性缔合物,在甲醇-1.25mmol/L混合磷酸盐流动相中,被非极性键合相柱(ODS)分离并定量检山。结果在此检测条什下硝酸盐和亚硝酸盐有很好的线性,相关系数均人于0.9999,两者的最小检出限分别为0.01mg/L和0.005mg/L,相对标准差均小于5%,回收率在86.3%-99.1%之间。结论该法适用于卤肉制品中硝酸盐及亚硝酸盐含量的同时测定。 Objective To determie the contents of nitrates and nitrites in cooked meat products by using diode array detector and high performance liquid chromatography (HPLC). Methods The separation was performed with 3mM tetrabutylammonium dissolved in methanol- mixed phosphate (15:85) buffer as isocatic mobile phase at a flow rate of 1. 0ml/min and accomplished by ODS - C18 column. Results There was a good linear correlation (r = 0.9999) over the working range and detection limits of 0. 01mg/L and 0. 005mg/L for determination of nitrates and nitrites, respectively. The recoveries were from 86.3 % to 99,1% . The relative standard deviations was both less than 5 % . Conclusion The method was simple, rapid and accurate for determination of nitrates and nitrites.
