摘要
分析测定了当前河北省大面积推广的26个优质麦品种的物化性质和面团流变特性。结果表明:优质麦品种均属于强筋小麦,容重、湿面筋、蛋白质含量较高,品种间面团流变学特性差异较大。并针对河北省小麦品质现状、资源优势及区域特性,对今后优质小麦育种、优质小麦生产基地和品种的开发利用作了初步探讨。
The quality characters of 25 high-quality wheat in Hebei Province were studied. The results showed that all high-quality wheat varieties were strong gluten wheat, and grain test weight, wet gluten, gross protein content were higher, but sedimentation value, wet gluten content, gluten index, development time, stability time had big difference. Facing the status of wheat quality, resource superiority and characteristic of region in Hebei, the breeding of good wheat, properly planting areas and industrial exploitation for high-quality wheat varieties were also discussed in the paper.
