摘要
通过单因素试验和正交试验研究了沙米绿原酸的提取工艺条件,用还原能力和Raneimat法对其抗氧化活性和其他抗氧化剂进行了比较分析。从沙米中提取绿原酸的最佳条件为:料液比(g:mL)1:8,乙醇体积分数60%,回流时间2h,冷藏时间12h,绿原酸产率达3.137%;沙米绿原酸有较强的还原能力,当浓度为187.5 mg/L时,它对猪油的抗氧化活性最强,且其抗氧化活性优于同浓度的Vc、BHA,但弱于Trolox。
To study the extracting conditions and antioxidant activity of chlorogenic acid in Agtiopllyllum Squarrosum. Extraction technology of chlorogenic acid in Agriophyllurn squarrosurn was studied by single factor and orthogonal experiment. The antioxidant activity of chlorogenic acid in Agriophyllum quarrosum was compared with other antioxidants by using reducing power and Rancimat method. The optimum extraction conditions were established as follows: 60% ethanol as solvent , ratio of material to solvent 1 : 8(W/ V), extracting 2h and frozen 12 h. In this extracting condition, the yield of chlorogenic acid was up to 3. 137%. Chlorogenic acid in Agtiopllyllurn squarrosum had strong reducing power. It had highest antioxidant activity at the concentration of 187.5mg/L. Compared with Vc and BHA at the same concentration, it had better antioxidant activity, but no better than Trolox. Chlorogenic acid in Agtiopllyllurn squarrosum was a natural and strong antioxidant.
