摘要
目的 结合新乡市民的肉食品消费习惯,对10种鱼类的营养价值进行综合评价。方法 采用生化分析方法,对新乡市场10种常见食用鱼类肌肉营养成分(水分、粗蛋白质、粗脂肪、矿物质、总钙和总磷)进行了比较分析。结果 10种鱼类肌肉中草鱼水允含量最高,鲤鱼水分含量最低;脂肪含量鲤鱼最高,鳙鱼最低;粗蛋白含量鲤鱼最高,鲢鱼最低;矿物质含量鳙鱼最高,黄鳝最低;尼罗罗非鱼肌肉中钙含量显著高于黄鳝、鳙鱼、鲢鱼、草鱼、鳜鱼和鲈鱼(P〈0.05);总磷含量范围为0.75%~1.15%。结论 新乡市场10种常见食用鱼类均属高蛋白、低脂肪食品,且富含钙、磷等人体必需的矿物质。
Objective To evaluated the nutritive value of ten fishes based on the meat produce consuming custom habits of Xinxiang citizen. Methods Nutritional compositions in muscle of ten species edible fishes in Xinxiang City including water,crude protein ,crude fat ,mineral substance ,total calcium and phosphorus were analyzed and compared by biochemistry analytical method. Results The content of water in ctenopharyngodon idellus was the highest, but in cyprinus carpio was the lowest. The content of crude fat in cyprinus carpio was the highest, but in aristichthys nobilis was the lowest. The content of crude protein in cyprinus carpio was the highest, but in hypophthalmichthys molitrix was the lowest. The content of mineral cubstance in aristichthys nohilis was the highest, but in monopterus albus was the lowest. The total calcium in oreochromis niloticus was significant haigher than that in monopterus albus ,aristichthys nobilis,hypophthalmichthys molitrix,ctenopharyngodon idellus,siniperca chuatsi and lateolabrax japonicus (P 〈0.05). The content scope of total phosphorus was 0.75% - 1.15%. Conclusion The ten species fisher have high protein content and poor fat content, and also rich in necessary mineral substance such as calcium and phosphorus.
