摘要
以柠檬酸、乙酸酐、脂肪酸单甘酯为原料，合成了各项质量指标符合ＦＡＯ／ＷＨＯ标准，ＥＷＧ和ＦＣＣ－Ⅲ标准的柠檬酸甘油酯（ＣＭＧ），确定了合成的最佳工艺路线，并以此为原料配制了两种复合型抗氧剂，抗氧效果优。
Citric acid ester of glycerol were synthesized from citric acid,acetic anhydride and fatty monogly cerides,and their quality indices were in agreement with the standards of FAO/WHO. The optimum technological conditions for the esierification determined two composite antioxidants,and got prepared for using citric acid esters of glycerol,as the main componend,Test results showed that their antioxidation effectiveness were superior to that of the forlign products,They can be worth opplying to oils and fats as well as fat viched foods.
