摘要 浓香型白酒生产中泥窖、窖泥对酒的产量、质量很重要,老窖泥中长年富集、驯化的种类和数目繁多的有益酿酒微生物群落,为生产出优质酒提供了先决条件。建窖的关键是:①建窖材料的选择。既要能防渗漏水、有保水性能,又要防外部环境对窖池渗透水的影响;还要考虑黄浆水对建窖池材料的浸泡腐蚀;要利于有益微生物的生长繁殖和富集。②人工窖泥的培养配方。配方要考虑有利于培养富集酿酒有益微生物所需的水分、pH、氮、磷、钾、碳等因素。 Pit mud and mud pit played important roles in liquor yield and liquor quality in the production of Luzhou-flavor Daqu liquor. The long-term accumulated and domesticated microflora in aged pit mud was the prerequisite of the production of quality liquor. The keys to build scientific pits covered: 1. the selection of pits-building materials. The materials should be antiseep and water-preserving and it could prevent the outside environmental effects on infiltrating water in pits. Besides, the corrosion of yellow seriflux to the materials should be considered and the materials should be helpful for the growth and the propagation and the accumulation of beneficial microbes.2, the water helpful for the accumulation of beneficial microbes should also be considered during the culture ofmanmade pit mud.
