摘要 通过不同的处理方法对醇变性大豆蛋白(ASP)进行改性。分别考察了高速剪切处理、加热处理、酸处理和碱处理对醇变性大豆蛋白溶解特征的影响。实验结果表明,高速剪切处理能提高醇变性大豆蛋白的溶解性;高速剪切和加热处理过的醇变性大豆蛋白溶解时,随着温度的升高溶出的聚集体会增多,而酸和碱处理后的情况则相反。 Alcohol washed soybean protein(ASP) was modified by different treatment. The effects of factors, such as high-speed shear treatment, heat treatment, acid treatment and alkali treatment on the soluble characteristic were investigated. The results showed that the high-speed shear treatment could enhance the solubility of ASP, the aggregates of ASP solution modified by high-speed shear or heat treatment increased with the temperature rising ,while acid and alkali treatment were the opposite.
