摘要
淀粉是小麦的主要成分,在食品工业和淀粉化工行业应用广泛。现对小麦淀粉合成关键酶的研究进展作一综述。
Starch is the main element in wheat. Increasingly, it is used in foodstuffs industry and starch chemical engineering. This review summarizes the research on the roles and properties of the key enzymes related to starch synthesis.
